You dont... well there are programs that claim to be able to create a midi file from a wav but there is no way for this to be accurate because of the format of the midi file. It is not an actual recording of the instruments or voices, but a set of instructions to the computer to generate the sounds using the midi instruments. This is done by telling the computer exactally what note each instrument is playing at every second. This is perhaps possible if the mp3 only has one voice but beyond that it is virtually impossible.
