Last name firs

For the life of me I cannot find an answer to what I assume is a simple question. I'm hoping someone can help?

How do I ensure that my album artist is displayed "last name first"? I want Williams, John not John Williams.

Normally you would edit the tags before or after ripping.

Is it not possible to set this as the norm in the Tags & Filenames option? I thought that Detect 'xxx.yyy' and swap to 'yyy.xxx' might do it but it doesn't seem to be the case.

No, this option is the reverse of what you require (it un-swaps them).
