Mass Converter: How Do I Transfer These Files?

After converting a large portion of (A-F) portion of my CD collection (FLAC-to-MP3), I discovered the way to copy the cue and log files along with the images which were already being copied to their respective output folders.

Could this oversight be corrected after the fact to avoid having to reconvert the affected folders?

Thank you. Is the recommended practice in such a case to simply simply overwrite the transcodes, or to delete all and start afresh?
