How do i extract files out of itunes?

Hi all, i'm pretty new to this. so, my ipod is just about ready to hit the bottom of the trash can, and i was looking into a new device like a cowon a2. i have a lot of music in my library for itunes, including purchased songs, so my question is: How do i extract the songs from itunes into another music manager?

Without any fancy stuff, just copy the folder elsewhere on the pc.

The purchased files however most probably cannot be converted. They can be recorded to an unprotected autio format through dMC Auxiliary Input, unless you can burn them to audio cd using iTunes so that you may rip the cd's after that.
