Ah you are reporting what is shown as the encoder, it is Lame which is used when encoding as mp3.

Why does Lavc61.19 appear instead of Lame?

Because the detection of Lame relies on a lame header being written, and it is not from video extraction, there is no string saying lame so the code guesses a different encoder.

Audio Extract configuration, appear Audio Stream, from 0 to 10.
What setting from 0 to 10 do you recommend?

They are physical streams, normally videos only have one stream, but it could have a voice over stream, or different language.
