I was wondering if you can download music from itunes onto say an iRiver or any other mp3 player apart from an iPod.

Yes, if you strip out the DRM either using Hymn or by recording the song as you play it using Auxiliary Input. More info here: http://forum.dbpoweramp.com/showthread.php?t=6258
