ripping some of my CD's to .mp3

i'm ripping some of my CD's to .mp3 and i'm sure there are ways to:

1/ Change destination folder (rather than C: drive)

2/ Define filename format - e.g. Artist - Album - Track no - Track Name

at the moment i am moving all the mp3s and renaming them all - phew

any pointers?

Or update to R12 and the filename is shown on the main page.
