How do I clear false metadata (for Audiobooks)

When I put in the 1st CD of multiple CDs, it pulled in metadata for music album. How can I cancel this?

Also is it good to rip Audiobook in mp3 or lossless?
I'm debating between Apple lossless or mp3...
