Now that I have 300 or so CDs on my HP 15Z-CW000 laptop (which is used exclusively for this purpose), I'd like to create playlists that can be played through my audio system or be used to burn CDs. It seems that the headphone jack is the laptop's audio output and that the cable would then convert to L&R RCA connectors to my receiver... correct? There is also an HDMI output on the laptop and an HDMI input on my receiver. Would this work better than the headphone jack? What software should be used? Any special tips?

The output of the headphone jack is a analogue signal, produced in an audio critical enviroment like the laptop. This signal is not ment to be an input signal of an audio system, even so it would work. You better use the HDMI output, cause the transport of the audio signal is digital. Now it's up to your audio system, to convert the signal from digital to analogue. Usually an audio system has the better D/A converters.

There are plenty of audio players like Foobar etc. pp. Try to avoid iTunes or Windows Media Player. Especially the latter one can easily ruin your metadata and ID tags. I myself use Kodi and libreelec to playback audio and video files, but I don't use playlists at all.
