Is there a way to save the album art to disk when ripping to MP3? It saves the image to folder.jpg if ripping to wav but not mp3?

Yes, there is a way. You can add the DSP "ID Tag Processing" and configure the export for the album art.
But BTW: it is no good idea to rip to mp3 (only), 'cause you increase the chance you have to rip your music multiple times, which is no fun at all. Better rip to a lossless format like flac to create your longtime archive. You can convert those loseless flac files into lossy audio files like mp3 files or any other format as often as you like without the need to rip the CDs once again.
