I rip a lot of classical music as well. I found it easiest to rip entire concerts/operas/sonatas/etc... as a single file, since I would always listen to a full concerto and don't really care if it's track 1, 2 or 3. To that end I've been using, at least for car use. For car I reap at 320 KB. I then use utility Merge MP3 to combine all tracks. It's a freeware - http://www.shchuka.com/software/mergemp3, and works quite well.
