What meta data is captured in a flac file

This may be a very basic question.

I have just started using dBpoweramp Power pack. I want to rip to flac. When I load a CD under the ID Meta tab I get the Meta Data for All Tracks. Some of the fields (Album, Artist..) are presented in black while some of the fields are greyed out (Catalog number, Chorus, ComposerSort..). The fields that are greyed out all have sensible data.

Does the fact that a field is grey mean that this information is not captured in the flac file?

Is it possible to capture this information?

CD Ripper >> Options Button >> ID Tag & Meta Data - you have to enable these fields if you want then written.
