How do I set asset to ignore the word 'the'
Only option I can see is to replace The Artist with Artist, The - which absolutely loathe
The other option is to remove 'the', which I'd prefer not to do

By default artists are presented in the location without 'The', so The beetles would be under B

You could also use the Sort tags for Artist to ensure this follows for other similar articles you don't want to use when sorting but keep in the displayed list. Things like La, Le, Di, etc. can all be dropped from the sorting if you use the optional Sort tags.

Perhaps I should have said, ignore 'the' when sorting - all artists with the are appearing under T
I also focus on Album Artist field not Artist

Asset does ignore it for sorting, your control point might be bypassing Asset.
