How to adjust High Resolution Wav file to CD format with DSP options in correct way

I have the following 2 questions, maybe one exclude the other.

I want to resample some Flac files (f.i. 48 Khz/24 bit) to Wav CD format (44.1 Khz/16 bit). I see the options to set these values in top of the screen (bullet: Uncompressed). However, to do it correctly...

I have extracted audio from a dvd (24 bit 48 khz) and now I'd like to burn a cd...
I can easily convert 48 khz to 44,1, but which dither should I use to get the best result for 16 bit? What does dither do exactly, why is it recommended and what is the difference between triangular and rectangular?...
