Profile settings

I had thought the profile could be used to set a setting for MP3 to a location for MP3, and change profile to FLAC, and rip to a location for FLAC.

Setting this up baffles me.

You want to rip to 2 formats at the same time?

No, one then the other, Insert CD once, rip both formats one then the other.

Why not use 'Multi Encoder' to rip to both FLAC and mp3 (they can be saved at different locations).
