Beyond confirming that I've tagged 10s of thousands of files for iTunes and never needed "....SortOrder" tags for proper sorting, I don't know what to tell you. AlbumArtistSort, ArtistSort, and ComposerSort are the specific metadata fields that show up under the Sorting tab in that little iTunes Info window. Not saying "...SortOrder" wouldn't work (as I've never bothered to try them), just that I know they are unnecessary if you use normal "...Sort" tags.
