Use of new feaures

Just upgraded family pack to R15 bundled with PerfectTunes.

Where do I find, and how do I invoke the following new features within CD Ripper in R15?
1. "flac has rating tagging option of 0-5 0-10 and 0-100 ranges"
2. "new option 'ANSI (ISO-8859) Characters Only in Filename' on 'Filename Restricted Characters Page'"
