I want to convert audio files into .aiff format for alert tones on my iphone. Anyone have any idea on how to do this??

Install dBpoweramp Music Converter, visit codec central and install the AIFF codec, convert your files...

It says its included, but its not in the drop down menu when converting.

It is supposed to be...if you have R14.2

The confusion might be because there is a trial + registered version, the registered version has it for sure, but if the trial does not I will add for R14.3 which is released this week.
