In MP3Tag, I tend to use the Extended Tags... dialog.
First backup your tags using the Audio Info Utility Codec (or Export in MP3Tag).

Your options are continue with R13.5, but you will not get metadata from freedb or All Media Guide OR upgrade, to get the latest providers and access to a snapshot of the freedb database circa 2020.
Are you getting any metadata?
In CD Ripper R13.5, what is selected in Menu > Active Providers?
Sample rate and bit depth are not tags, and editing them would alter the the actual digital audio.

Are you saying that after inserting a CD in you drive, CD Ripper gets metadata from the online databases, but all the retrieved tags are in Japanese, or just the titles?
If ID Tags views style correctly, perhaps your player software doesn't support style?
