So, I got an Audio CD from my colleague and could test it successfully with CD Ripper. CD Ripper showed the metadata as well as the presence in the accurate rip database.

Each encoder has its own path and naming string! Check "Settings" -> "Output To" for each encoder. Choose "Edit Dynamic Naming" to configure the naming string.

Changes to metadata in CD Ripper work pre-rip only. If you want to change metadata post-rip, you can use i.e. the "Edit ID Tags" function in the context menu of the file explorer.
