If I have Windows on my Mac Mini via Parallels or some other program for instance, can I use the Teac drive you supply, along with the software to rip?

Yes you could, although the internal drive might interfere, you could use the internal drive of the mac mini, but it would be non-secure ripping.

Doesn't the Teac drive connect via USB? So, couldn't I simply select the Teac drive to use for ripping? Or, would the ripping software prevent it?

RipNAS Essentials has not real interface, it is designed to run in Windows Home Server with no screen attached.
